It's made like lasagna but instead of noodles use slices of eggplant. Very delicious! Short of that just batter it and fry it up. Yum! I did salt and fry my eggplant prior to making the lasagna. tinahttps://www.blogger.com/profile/17415302577518111227noreply@blogger.comtag:blogger.com,1999:blog-7113123529932691813.post-80599281339601264272015-09-01T07:36:45.959-05:002015-09-01T07:36:45.959-05:00Your vegetable garden is really lovely; I can see ...Your vegetable garden is really lovely; I can see why you would want to show it off. But my three eggplant plants are producing like crazy! I've been scouring Pinterest for ideas, and think I&#Rosehttps://www.blogger.com/profile/01384059342847120951noreply@blogger.comtag:blogger.com,1999:blog-7113123529932691813.post-72385717263783642032015-08-31T17:32:26.454-05:002015-08-31T17:32:26.454-05:00You have really been busy. You have done a wonderful job and so much in such a short period of time. I was most impressed and it has been a joy watching it from a pasture to the home and gardens you have created! I have a variety of Fig called a Chicago Fig. I bet it would stand up to your winter and conditions in the garden. It is in a place where it dies back every year here and it still produces figs.
